Ellis Cormier The Boudin King from Louisiana

    Ellis Cormier (1922-97), "The Boudin King," was the founder and proprietor of the Boudin King Restaurant in Jennings, La. He sold a ton of boudin every year – actually, about 80 tons!

    Ellis took great pride in his boudin and even had the Louisiana Legislature officially declare his hometown of Jennings to be the "Boudin Capital of the Universe."

    Now, the City of Scott, La., which had the Legislature declare it "Boudin Capital of the World," might take exception to Ellis' bold claim. That's because Scott, of course, is the home of The Best Stop, Don's Specialty Meats, Billy's, Nunu's and Menard's. They, too, sell many tons of outstanding boudin.

    While most boudin is bought from south Louisiana stores, some people do make their own. A recipe for boudin and other great Cajun dishes can be found in the cookbook of authentic Cajun recipes, "Cajun Cooking (Book 1) – The Original." It's available at www.acadianhouse.com/cookbooks. For those who may not know it, boudin is a mixture of pork, rice and various seasonings stuffed into sausage casings. It's a quick, easy meal for breakfast, lunch, or as a snack.
